Another Italian classic making an appearance on our feed! š®š¹
We had this as a light snack before our late lunch / dinner the other day and it was divine! š¤¤ For something so easy and cheap to make, it packs on a load of flavour and yummy-ness š
š 10 minutes š¤ 3-4 people
Ingredients
6 plum tomatoes, diced
2 cloves garlic, finely minced
Handful of basil leaves, chopped into thin ribbons
2 tbsp olive oil
Salt & pepper to taste
Splash of balsamic vinegar
Toasted sliced baguette
Optional: mozzarella
Method
1. Combine tomatoes, basil and garlic into a bowl
2. Salt and pepper to taste
3. Generous splash of olive oil
4. Rub a clove of garlic on to your sliced baguette and add a splash of olive oil and toast until golden and crispy
5. Add a tablespoon of the tomato mixture on your toasted baguette & enjoy!
