Another summer staple when you want something speedy, healthy but TASTY! If you somehow have extra satay sauce lying around from the summer rolls. You can use it up for this recipe as your salad dressing!
This salad is also great for using up the veggies in your fridge. šš¼

Ingredients
1/2 head cabbage
Baby gem lettuce
2 medium carrots
1ā2 cucumber
Fried shallots
Grilled Chicken
2 chicken breast, butterflied
Garlic powder
Salt & pepper
The āDressingā
Mint ā finely chopped
Coriander ā finely chopped
1/2 Lime
Method:
Season chicken breast and grill in oven 190C for 15-20 mins
In a large bowl, combine dressing ingredients, add all veggies and toss.
To serve, place dressed salad in a plate and top with grilled chicken, garnish with fried shallots and more coriander!
