Chicken Satay Salad šŸ„—


Another summer staple when you want something speedy, healthy but TASTY! If you somehow have extra satay sauce lying around from the summer rolls. You can use it up for this recipe as your salad dressing!


This salad is also great for using up the veggies in your fridge. šŸ™ŒšŸ¼


šŸ•’ 20 mins šŸ‘¤ 2-3 people











Ingredients
  • 1/2 head cabbage

  • Baby gem lettuce

  • 2 medium carrots

  • 1ā„2 cucumber

  • Fried shallots

Grilled Chicken

  • 2 chicken breast, butterflied

  • Garlic powder

  • Salt & pepper

The ā€œDressingā€

Method:
  1. Season chicken breast and grill in oven 190C for 15-20 mins

  2. In a large bowl, combine dressing ingredients, add all veggies and toss.

  3. To serve, place dressed salad in a plate and top with grilled chicken, garnish with fried shallots and more coriander!
