Chicken Satay Skewers


For today’s menu we made chicken satay skewers served with our favourite spicy peanut sauce 🥜


Packed full of flavour on its own but better with our peanut sauce (RECIPE HERE). The recipe for these satay skewers is actually really simple. Marinate your chicken thighs for a couple hours, pop them on the grill and you’re good to go 😋


You can cook these on your favourite flat griddle pan but for best results, use a grill pan. 🍳

Ingredients
  • 400g chicken thighs

  • 2 tbsp red curry paste

  • 400ml coconut milk

  • 2 tbsp sweet soy sauce

  • 1 tbsp tumeric

  • 1 tbsp sugar

  • 1 tsp salt

  • Olive oil spray

  • Skewer sticks

Optional Garnish

  • Peanuts - crushed

  • Birds eye chillies - chopped

  • Coriander - chopped

  • 1 stalk green onion - chopped

  • Lime wedges

Method
  1. Cut chicken thighs into 1 inch, bite sized pieces.

  2. In a large bowl mix red curry paste, coconut milk, sweet soy sauce, tumeric, sugar and salt. Add the chicken and mix well. Marinate for at least 20 minutes or for best results, overnight.

  3. Thread chicken pieces on wooden skewers. About 4-5 pieces on a 10 inch skewer.

  4. Heat up your grill to medium-high heat and spray olive oil. Add chicken on the grill in batches until golden brown. About 4 minutes per side.

  5. Serve on a plate and garnish with crushed peanuts, coriander, green onion, chillies and a lime wedge. ✨ Optional, you can also serve with our favourite peanut sauce! ✨
