One-Pot Veggie Stir Fry | Chop Suey šŸ„—


A healthy one-pot meal that can be ready in 30 mins! This is our veggie stir fry, also known as chop suey. Itā€™s a great recipe to have in your pocket for fridge-dumps and you can mix and match veggies of your choice. Meat is optional too.

Ingredients

Vegetables

  • 1 medium onion - sliced

  • 4 cloves garlic - minced

  • 2 medium carrots - sliced

  • 1/4 head of broccoli - sliced

  • 1/4 head of cauliflower - sliced

  • 1/2 pack mangetout

  • 1/2 Red bell pepper - sliced

  • 1 pack baby corn - cut into thirds

  • Optional: Chicken, Prawn and quail eggs or meat of choice.

Sauce

  • 4 tbsp soy sauce

  • 3 tbsp oyster sauce

  • 1/2 tsp of pepper

Cornstarch Slurry

  • 1/4 cup water and 1 tbsp cornstarch (diluted in water)

Method
  1. In a bowl, combine sauce ingredients and set aside.

  2. In a large wok, heat oil in med-high heat.

  3. SautƩ onion and garlic until fragrant.

  4. Add in meat of choice and once done, set aside.

  5. Add another 1/2 tbsp of oil and stir fry veggies.

  6. Add 1/4 cup water and close with lid for 3-5 mins or until veggies are nearly cooked.

  7. Add sauce and stir fry to combine.

  8. Once sauce is fully combined, add cornstarch slurry to thicken sauce.

  9. Serve with a warm bowl of rice and enjoy!!
