A healthy one-pot meal that can be ready in 30 mins! This is our veggie stir fry, also known as chop suey. Itās a great recipe to have in your pocket for fridge-dumps and you can mix and match veggies of your choice. Meat is optional too.

Ingredients
Vegetables
1 medium onion - sliced
4 cloves garlic - minced
2 medium carrots - sliced
1/4 head of broccoli - sliced
1/4 head of cauliflower - sliced
1/2 pack mangetout
1/2 Red bell pepper - sliced
1 pack baby corn - cut into thirds
Optional: Chicken, Prawn and quail eggs or meat of choice.
Sauce
4 tbsp soy sauce
3 tbsp oyster sauce
1/2 tsp of pepper
Cornstarch Slurry
1/4 cup water and 1 tbsp cornstarch (diluted in water)
Method
In a bowl, combine sauce ingredients and set aside.
In a large wok, heat oil in med-high heat.
SautƩ onion and garlic until fragrant.
Add in meat of choice and once done, set aside.
Add another 1/2 tbsp of oil and stir fry veggies.
Add 1/4 cup water and close with lid for 3-5 mins or until veggies are nearly cooked.
Add sauce and stir fry to combine.
Once sauce is fully combined, add cornstarch slurry to thicken sauce.
Serve with a warm bowl of rice and enjoy!!
