The perfect comfort meal if youâre looking for a quick and easy recipe to whip up for dinner! We love to make a big batch and have it ready for the weeks lunch! We made our curry with Golden Curryâs cubes & you honestly cannot go wrong with this box đ¤¤

Ingredients
500g Chicken thighs (or any preferred meat!) - cut into bite size pieces
4 cubes S&B Golden Curry Sauce
500ml water / chicken stock
2 medium onions - thinly sliced
1 tbsp ginger - grated / finely minced
3-4 cloves garlic - finely minced
2 medium carrots - large diced / cut into chunks
1 large potato - large diced / cut into chunks
2 tbsp butter
1/2 cup peas - optional
100ml coconut milk - optional
Salt and Pepper to taste
Toppings (optional)
Soft boiled eggs
Furkujinzuke / Pickled daikon
Green onions - finely chopped
Method
In a large pan in med-high heat, melt butter and onions, garlic and ginger. SautĂŠ until fragrant.
Add chicken and stir-fry until golden brown in colour.
Add potatoes, carrots and water/ chicken stock and bring to boil.
Add curry cubes and stir to dissolve. Reduce to med-low heat and simmer until the sauce thickens.
*Optional: Add peas and coconut milk to enhance the richness of the sauce.
Add salt and pepper to taste.
Serve with a bowl of rice with a soft-boiled egg and pickled daikon and enjoy! đ
