Oven-Baked Peri Peri Chicken šŸ‡µšŸ‡¹


A staple dish in our place, this one is undeniably tasty and a true crowd pleaser! Marinated overnight, the flavours are deeper and more intense and baked until cooked and the skin is slightly crispy! šŸ¤¤ We used chicken thighs for this recipe but you can you can also substitute chicken breasts for this, itā€™s equally delicious.


šŸ•’ 1 hour šŸ‘¤ 3-4 people








Ingredients
  • 1kg chicken thigh (with skin)

  • 1 lemon - zest and juice

  • Peri-peri marinade sauce (medium) - readily available in most groceries with the sauce!

  • 2 tbsp garlic powder

  • 1 tbsp onion powder

  • 2 tbsp chilli flakes - or more if you like yours spicy šŸŒ¶

  • Salt & pepper

Method
  1. In a large bowl, marinate the chicken with all the ingredients above.

  2. Marinate the chicken for at least 1 hour or for best result, overnight in the fridge.

  3. Remove from fridge 30 mins before cooking.

  4. Preheat oven to 180Ā°c and bake for 20mins covered with thin foil and remove foil and bake for another 20 mins.

  5. Remove from oven and serve with potatoes, buttered corn or rice and enjoy!
