Shakshuka



Level up your brunch game with this filling shakshuka recipe! It only requires 1

pan and you probably already have most of the ingredients sitting in you pantry

or fridge!

Ingredients
  • 2 tbsp olive oil

  • 4 minced garlic cloves

  • 1 diced onion

  • 1 diced red bell pepper

  • 1 tbsp paprika

  • 1 tbsp cumin

  • 1/2 tbsp chilli powder

  • 1 can of peeled tomatoes

  • 4 eggs

  • Salt & pepper to taste

  • Coriander


Optional

  • Chorizo chunks

  • 1 can chickpeas

  • Crumbled feta cheese


Method
  1. In a large saucepan, sauté garlic and onion until fragrant.

  2. Add bell pepper, spices, canned tomato, chickpeas and chorizo.

  3. Bring to simmer and add s+p to taste.

  4. Create small dimples in the pan and slowly crack an egg in each.

  5. Cover and let the egg cook for around 5 minutes.

  6. Garnish with coriander and feta.

  7. Serve with bread of choice and enjoy!
