If you’ve never cooked with lemongrass before, don’t be intimidated! This dish is aromatic, packed full of flavour and can be served just under 30 mins! The best thing is, you can find all if the ingredients at a big Dunnes or Tesco.
You can customise it to your liking, either served on a warm bowl of rice or a bed of rice noodles, this chicken recipe is guaranteed to be one of your midweek-meal favourites.

Ingredients
500g chicken thighs (5-6 medium sized chicken thighs)
Marinade
3 tbsp fish sauce
2 tbsp of a lime
3 tbsp sugar
2 lemongrass stalks
6 cloves garlic
1 tsp five spice
Nuoc Mam (Sweet Sour Fish Sauce)
1/4 cup warm water
2 tbsp sugar
2 tbsp fish sauce
1.5 tbsp lime juice
1 clove garlic
1 birds eye chillies
Optional: shredded carrots
Method
To make the marinade, blitz all ingredients listed under “chicken marinade” using a mini chopper until it forms a paste.
In a large bowl, combine the chicken and marinade together. Marinate for at least 2 hours or for best result, 24 hours.
For the nuoc mam, combine all sauce ingredients. Set aside until ready to serve.
When ready to cook, grill chicken on high heat for around 5 minutes on each side or until cooked.
Serve on a bed of rice or vermicelli noodles, garnish with coriander, sliced cucumber, and enjoy!
